
Can you omit or change some ingrediants from a Kugel recipe?
Since I'm Jewish, the family of my fiancé asked if I could make a Jew "traditional" food for Christmas brunch. The first thing that came to mind was a Kugel. The sister of my fiance can not eat gluten (she has celiac disease), and all receipts for at least Kugel Potato require a small amount of flour unleavened bread (which has flowers). Can I remove the matzo meal for a Kugel potato or use gluten free pasta noodles for a Kugel? Too, depending on your experience, how has the taste and texture right?
I am a former chef and worked with a restore operation Kosher and "Yes", you can make some changes to the Potato Kugel use a little starch potatoes available in the kosher section or groceries or meals, even the rice flour. As for gluten-free noodles, there are alternatives like grains of brown rice, rice, maize and spelled, it depends on your orthodox if you can use or eat products made from corn, I buy rice noodles, here in Canada than I do not eat products containing wheat, you may have to go to a health food store, but buy everything here in Toronto and found in markets are also kosher Pareve.
